Optional Cheese Pairings suggested by Sebastian:  TBA

Olsson’s Cheese Plate:

The cheeses selected by Sebastian are locally produced. All purchases are optional, but Olsson’s does have the cheeses in stock .

 1. Cheese pairing suggestion: Valley shepherd Verigoat. This local goat milk cheese is made in Long Valley, Northern NJ and aged in caves for 6 weeks before release. It’s an aromatic and lean cheese with a crumble texture. It offers herbal and floral notes with a saline note. Ideal to accompany the crisp and dry Semillon white wine made by SILKMAN in Hunter Valley region, New South Whale, Australia.

 2. Cheese pairing suggestion: Cherry Grove Oumami Brie. This is a raw cow milk based cheese made in Lawrenceville, NJ. It’s a creamy and highly moisture Brie with notes of lemon rim, earth and grass. Texture is soft and buttery with mushroom and earthy flavors. This a perfect pairing for the Pinot Gris made in Tasmania Island by Holm Oak.

 3. Cheese pairing suggestion: Kidchego. This is a goat milk version of the Spanish cheese Manchego that is traditionally made with milk from sheep. This cheese has a firm, compact consistency and a smooth texture. While mild in flavor, this is a cheese that's rich in a simple way. It is tangy, yet savory, soft and substantial, made locally in Lancaster Pa from Misty Creek Farms. It’s smooth texture and grassy flavors make this cheese ideal to pair with the Pinot Noir from Mc Pherson made in Victoria, South Australia.

4. Cheese pairing suggestion: Flory’s Truckle. Cow raw milk semi firm cheese made in Missouri and inspired by the English cheddar. Aged for one year before release. Notes of grass and a nutty flavor with a fruity aftertaste. Ideal pairing for the full-bodied Cabernet from Balnaves in Coonawarra. South Australia.
